Inspired by one of our favourite uk restaurants las iguanas here is a recipe for a vegetarian chilli con carne. Heat the olive oil in a large saucepan. 2 tsp chilli powder more if you like it hot.

4 cloves of garlic. Add the tomato paste and season with salt pepper cumin paprika powder and oregano. 1 x 400g tin of chopped tomatoes.

Pour in the chopped tomatoes kidney beans lentils soy mince and vegetable stock. Mix the lentils in too and let it all simmer on medium heat for 20 mins stirring occasionally. 1 tsp garlic powder.

1 large onion chopped. Add the cumin chilli powder salt and pepper and stir. 2 tablespoons olive oil.

12 tsp cumin powder optional. Add in the extra flavourings if using. Add the broth beans lentils sweetcorn and chopped tomatoes and stir well.

1 x 400g tin of baked beans or kidney beansmixed beans. Ground coriander 1 tbsp.
